Triple Chocolate Mousse

These little individual mousse cakes are super cute, super easy and a sure fire way to impress your friends at your next dinner party!

Made with our Chocolate Éclair Ice Cream, they're pretty hard to beat!

Deep South Choc Eclair Soul Food

Ingredients

  • Chocolate Oreos

    1 Packet

  • Butter

    20g

  • White Chocolate

    150g

  • Dark Chocolate

    150g

  • Cream

    2 + 1/2 Cups

  • Gelatine

    2 Teaspoons

  • Cold Water

    4 Tablespoons

Method

  1. For the base:

    Blend Oreos into fine crumb, melt butter, mix together & spoon into moulds.

  2. For the mousse filling:

    Mix 1 teaspoon of gelatine in a small dish with 2 tablespoons of cold water. Let it swell for 5-10 minutes then melt in the microwave for 20 seconds, set aside.

  3. Melt dark chocolate with 1/4 cup runny cream & mix in the melted gelatine.

  4. Finally, whip 1 cup of cream into stiff peaks, fold in chocolate mixture and pour into moulds. Repeat the same process with white chocolate.

  5. To serve:

    Dust with cocoa & serve with a GENEROUS scoop of DEEP SOUTH Chocolate Eclair ice cream.
