Decadent Hokey Pokey Ice Cream Sandwiches

                    Ingredients
- Deep South 2L Hokey Pokey Ice Cream - 1 tub 
- Dark chocolate, melted - 200g 
- Butter - 150g 
- Brown Sugar - 1 Cup 
- Eggs - 2 
- Vanilla Extract - 1 Tsp 
- Flour - 3/4 Cup 
- Cocoa Powder - 1/4 Cup 
- Baking Soda - 1/2 Tsp 
- Salt - 1 Pinch 
Method
- Make the Brownie Layers: - Preheat oven to 175°C. Line a baking tray (30x20cm) with parchment paper.
- Melt chocolate and butter together until smooth. Stir in brown sugar.
- Whisk in eggs and vanilla.
- Fold in flour, cocoa powder, baking powder, and salt until just combined.
- Pour into the tray and bake for 15-20 mins until set. Let cool completely.
 
- Assemble the Sandwiches: - Slice the brownie in half.
- Spread softened Deep South Hokey Pokey Ice Cream evenly over one half.
- Top with the second brownie layer and freeze for at least 2 hours.
 
- Slice & Serve: - Cut into bars, dust with cocoa, and enjoy the perfect balance of chewy, creamy, and crunchy!
