Ingredients

  • Deep South 2L Hokey Pokey Ice Cream

    1 tub

  • Dark chocolate, melted

    200g

  • Butter

    150g

  • Brown Sugar

    1 Cup

  • Eggs

    2

  • Vanilla Extract

    1 Tsp

  • Flour

    3/4 Cup

  • Cocoa Powder

    1/4 Cup

  • Baking Soda

    1/2 Tsp

  • Salt

    1 Pinch

Method

  1. Make the Brownie Layers:

    • Preheat oven to 175°C. Line a baking tray (30x20cm) with parchment paper.
    • Melt chocolate and butter together until smooth. Stir in brown sugar.
    • Whisk in eggs and vanilla.
    • Fold in flour, cocoa powder, baking powder, and salt until just combined.
    • Pour into the tray and bake for 15-20 mins until set. Let cool completely.
  2. Assemble the Sandwiches:

    • Slice the brownie in half.
    • Spread softened Deep South Hokey Pokey Ice Cream evenly over one half.
    • Top with the second brownie layer and freeze for at least 2 hours.
  3. Slice & Serve:

    • Cut into bars, dust with cocoa, and enjoy the perfect balance of chewy, creamy, and crunchy!
